Oca (Rainbow)

Tolerant of harsh climates and poor soil, Oca is easy to grow and delicious to eat. Harvest the rainbow tubers in the fall and replant some of them in the spring to provide perennial harvests. Eat the tubers or leaves fresh or cooked.
